Attempt at Indian Food

This is the recipe that we were trying to imitate, however we made many improvisations. Discovered by Cynthia.

This was my first time making rice in a pot!
I sure miss a rice cooker because the proportioning is so much easier to measure

Cynthia: "A melting pot of everyone's vegetables"
Vegetables: White mushrooms, celery, tomatoes, onions, garlic, and green onions

First, we grilled the onions, garlic, and mushrooms until browned
Then we added the rest of the vegetables 

After the vegetables look nicely cooked, add 2 blocks of curry paste and 2 cups of water
Stir until the curry is bubbling and thick
We also added sriracha sauce since we didn't have japapenos

The special part of this curry is the "poached eggs"
We lowered the temperature of the stove and added 4 eggs.

Poaching an egg is putting an egg in boiling liquid and let it cook it that form until the egg white solidified. It actually took about 10 minutes for the egg to poach (long time for hungry stomachs)

Once everything is ready, we serve over rice

Overall, this felt like a basic curry dish (not Indian at all since we didn't use Indian curry powder and the other ingredients listed in the recipe). However, I really enjoyed this simple and healthy meal.
